Turkey Pesto Sliders

Whenever I think of sliders, I think of White Castle and when I think of White Castle, I think of wisdom teeth. Weird connection? Maybe. My older sister and I both got our wisdom teeth out at the same time. All I remember from the few days following it is being slightly drugged out on pain medicine, laying on the couch bed together, eating Dairy Queen ice cream and watching Harold and Kumar go to White Castle. And laughing. Because everything was funny.

White Castle's little mini burgers are so delicious but I wanted to go with slightly healthier version. So I found these turkey pesto sliders. Sliders are a perfect appetizer because they are hand-sized but very filling. These would be a great pick for the Super Bowl!

6 slider buns
6 slices of turkey deli meat
6 slices of provolone cheese
3 tbsp pesto
3 tbsp mayonnaise
2 tbsp butter, melted

Preheat the oven to 400ยบ. Line a baking sheet with foil. Split the slider buns and lay a folded slice of turkey on the bottom half of each bun. Layer each with a slice of provolone. In a small bow, combine the pesto and mayonnaise in a small bowl and mix until blended. Spread a thin layer of the pesto mayonnaise on the inner side of the top half of each bun. Replace the top bun over the cheese to assemble the sandwiches. Brush the tops of the buns lightly with melted butter. Bake 10 minutes or until the cheese is melted and the sandwiches are warmed through. Enjoy!

Buffalo Chicken Grilled Cheese Sandwich

This may look like your average grilled cheese sandwich but inside there's a little sumthin sumthin. A nice little kick that takes your average grilled cheese sandwich up a few notches.

Buffalo chicken and mozzarella cheese. This was inspired by a picture I pinned from Foodgawker. Foodgawker is where I go when I'm hungry and I want to torture myself with pictures of delicious looking food that I have no intention of making because my closet doesn't contain the ingredients and I'm too lazy to go out and get them.

But, I had the ingredients for this one folks! I had planned on making buffalo chicken sandwiches and when I saw this I couldn't resist turning it into a grilled cheese. And it was good.

By the way, I'd just like to point out that this is the second thing from my Pinterest "Yum" board and therefore I have already crossed off two things from my 23 x 23 list which is about the progress I had made a month ago on my News Years Resolutions. I've got a good feeling about this list :)

Your favorite recipe for buffalo chicken (I used this one prepared in the crock pot)
Mozzarella cheese
Blue cheese crumbles, optional (I didn't use any but I think it would definitely add to the sandwich)
sandwich bread
butter

Prepare your buffalo chicken. Spread butter on one side of a piece of bread. Place bread butter side down in a heated pan and top with mozzarella and blue cheese. Next, add a good amount of buffalo chicken on top of the cheese. Finally, top with another buttered slice of bread, butter side up. Grill until golden brown on both sides and cheese has melted (about 2 minutes per side). Enjoy!

Crockpot Buffalo Chicken Sandwiches

We have the Crockpot BBQ Chicken quite a bit in our house. It's so easy since it's just a bottle of BBQ sauce and chicken. Neil suggested I use buffalo sauce instead and this was a hit! I followed the suggestions over at Running Mama Cooks and added a few more ingredients. It's a very spicy meal but worth trying out!

4 boneless, skinless chicken breats
1 (17.5 fluid oz) bottle buffalo wing sauce
1 oz package dry ranch salad dressing mix
2 tbsp butter
6 hoagie rolls, split lengthwise (or sandwich bread of your choice)

Place the chicken breast in the crockpot along with 3/4 of the wing sauce and the ranch dressing mix. Cover and cook on low for 6-7 hours.

Once the chicken has cooked, add the butter and shred with two forks. Add the meat to your bread and splash with remaining buffalo wing sauce. Enjoy!

Philly Cheesesteaks

While back home in Georgia, I experienced the deliciousness that is a Philly Cheesesteak. My brother-in-law cooked these for us for dinner one night and I was hooked. The melted cheese combined with the crisp onions and peppers was addicting. I decided to to make these for dinner this week and the hubby was definitely pleased with the result. It's such an easy recipe for a delicious result.

1 loaf of Italian or French bread
1 large green pepper, diced
1 small onion, diced
2 tbsp of vegetable oil
1/2 lb of rib eye (or if you're bad like us you can use frozen Steakums :))
Your choice of cheese, either provolone or American
salt, pepper, and garlic to salt

Turn oven to warm and heat bread. Heat vegetable oil in skillet and saute diced green pepper and onion (about 5 minutes). Season the meat with salt, pepper, and garlic to suit your tastes. Add meat and cook until thoroughly cooked through.

At this point, you can either layer the different ingredients onto the warm bread or combine them in the skillet and lay the cheese on top to melt. Layer the ingredients on the bread and serve warm!
